*2Tbsp. Veg. Oil
*4med. Zucchini-thinly sliced
*1med. Onion -chopped
(1Tbsp. dried onion)
*1 16oz can Corn-Drained
*1 4oz can chopped Green Chili's
*2tsp. Jalapeno -seeded-chopped
*1/8tsp. Garlic Powder
*1/2C. Cheddar Cheese-Shredded


1.Heat oil in skillet,
2.add zucchini and onion saute 10 min. until tender.
3.stir in remaining stuff except cheese,
4.cook stirring occasionally until thoroughly heated.
5.Remove from heat stir in cheese.

almost forgot to take a pic boys ate it up fast
*edit: Add bacon :-)

Ummm, yum! Cheese and zucchini are a great combo... and the carnivorous side of me wants to put bacon in there too :surprisedwitch:

Funny you should say that. I have a recipe like this that does includes bacon and sour cream (no corn and peppers in the recipe though; they would be a excellent additions, and I'll have to try them). In the recipe I have the zukes are sliced lengthwise, laid out in a 13x9 pan, and broiled with the bacon I think. The do remember the dish being such a hit over the years that people who didn't think they liked zucchini became "converts" after eating it.

Thanks for posting, ladybloodie. :wink: Zucchini doesn't get half the attention it deserves.

Sweetie Pork Chops
ING.
sweet and tangy pork chops, with mash potatoes, asparagus
*1/4C. Honey
*2tbsp. Dijon Mustard
*1/2tsp. ground Ginger
*1/4tsp. ground Cinnamon
*6 chops
*1/2tsp. Sea Salt
*1/4tsp Pepper
•Mix together all ing. except Salt and Pepper
set aside
COOKING

•sprinkle Salt and Pepper on chops cook until brown.

•low heat give Honey mixture a quick stir.

•add to Pork Chops 10 min or until done.
NOTES
*little honey on potatoes taste great:-P
*thicker the chop the bitter these taste:-)

I think i will try both recipies
I havent tried these combinations - i am referring to the 2nd recipy.
