Healthy, tasty, and with only a couple of ingredients -- what more could you want?
Ingredients: 4 medium-sized zucchini, Parmesan cheese (shredded or freshly grated)
Instructions:
1) Preheat oven to 400 deg. Fahrenheit
2) Line baking sheet with aluminum foil
3) Cut zucchini in half lengthwise and place on baking sheet cut side up
4) Cover zucchini liberally with Parmesan cheese
5) If desired, add black pepper, garlic, or other spices to taste
6) Bake at 400 deg. for 6 to 8 minutes, depending on thickness of zucchini and desired tenderness
Serves anywhere from 2 to 4, depending on how hungry you are.
If you make little piles of Parmesan cheese directly on the foil and bake along with the zucchini, you'll get crispy baked cheese things (I don't know what else to call them), which are yummy too

I call those cheese chips! And yes they are good. I first made those by accident.
